Easy School Night Dinner: Greek Meatballs

When it comes to the week days, the easier the dinner is the better! This meal is one of our go-to’s! Not only it is very simple, but Aiden and Scott gobble it up.

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

What you’ll need:

o   1 pound ground beef

o   1 pack of Jimmy Dean sausage

o   ½ cup Italian breadcrumbs

o   1/3 cup almond milk (Aiden is allergic to dairy, so we try to cook without dairy whenever possible)

o   ½ teaspoon garlic

o   1 egg

o   1 teaspoon Italian seasoning

o   salt and pepper to taste

o   (Optional) 1 teaspoon Italian seasoning (for those who like a little kick)


1.       Preheat oven to 400 degrees F.

2.       Mix all ingredients in a medium sized bowl.

3.       Shape mixture into meatballs and place on cookie sheet (I make mine about the size of a golf ball).

4.       Bake for 20 minutes.

5.       Enjoy!

Extra Steps (optional)

I pair my meatballs with couscous, tomatoes and Greek yogurt with dill. It gives it more of a Mediterranean feel.
